Maltose is a simple sugar, a disaccharide composed of two glucose molecules. Such a structure of this sugar causes that it occurs, for example, in fruit, the reserve material of which is starch. In the process of fruit ripening, the starch contained in them is broken down into glucose, which gives them a sweet taste, and in this process, as an intermediate product, maltose particles (two glucose molecules interconnected) are formed.
