Wakame, dried seaweed from the brown algae family, is an everyday ingredient in Japanese cuisine, especially as an ingredient in miso soup and as an addition to ramen and sashimi noodles. With the addition of katsuobushi (pieces of dried bonito fish), it uniquely improves the taste of the dashi broth. Bred for centuries in Japan and Korea, it gained popularity in the West in the 1960s, due to their healing effect supporting the body in a number of ailments.
